What can you do with fresh tomatoes? Like a bunch of them? How about a homemade Tomato Sauce? We know you can always get them at the store, but it is always fun to make them from scratch – it will save those tomatoes you harvested from your garden or those ones your neighbor or co-worker gave you.
I used to get intimidated by the idea of making tomato sauce from scratch, but when I came to a point where I don’t know what to do with my beautiful, juicy tomatoes – I googled the recipe and watched a couple of YouTube videos, the next hour after that, I was making it. You can also turn some canned tomatoes into a sauce when you run out of sauce on a spaghetti night. So easy!
Chop your onions, throw in some fresh basil (dry basil is good too), and other basic spices such as red pepper flakes, dried oregano, and some Italian seasoning blend with salt and pepper to taste. Sauté with canned or blanched fresh tomatoes, puree with an immersion blender, let it simmer, let it cool and store in a clean container or some canning jars. Freeze or refrigerate for all-year-round use. Happy!

TOMATO SAUCE rECIPE
Ingredients:
- 6 lbs. fresh ripe tomatoes
- 1/4 cup olive oil
- 1 tbsp. chopped garlic
- 1 tbsp. chopped onions
- 1 tsp. dried oregano
- 1/2 tsp red pepper flakes
- Fresh basil (optional)
- 1 tbsp. granulated sugar
- 1 tsp salt
- dash of pepper
Directions:
- Pick some fresh & ripe tomatoes. Wash and clean them.
- Score the top part of the tomatoes. This will help with peeling.
- In a big pot of boiling water, add the fresh tomatoes. Let it boil over medium heat.
- Observe the tomato skin, when it starts cracking or peeling, it’s about ready.
- Soak tomatoes in iced cold water.
- Drain
- Carefully peel the skin off.
- Cut in half & remove the seeds.
- Place it in a blender or food processor.
- If you want chunky tomato sauce, chop the tomatoes or use a potato masher. If you prefer puree, you can put it in a food processor or use an immersion blender.
- In a shallow pot, saute onion, and garlic, in olive oil. Add tomatoes (pureed or chopped).
- Let them simmer and stir for about 45 to 60 minutes on medium to low heat. Add oregano, red bell pepper flakes, sugar, salt, and pepper.
- Bring low heat and simmer until it’s thick.
- Let it cool & put them in a jar. Perfect gift idea!
